Xiaoyi, Shanxi Province, China, May 2023- A pastry chef is making noodles with a knife on the production platform of the hotel kitchen. Knife plucked noodles are a unique feature in Shanxi. It is a traditional local specialty pasta. The knife used for surface cutting is specially made, about 60 centimeters long, with handles at both ends. The blade is flat and straight, and cannot have a "bulging belly". Each knife weighs approximately 2.5 kilograms. The surface pulled out with this knife is very neat, with consistent thickness and a small triangular cross-section, each more than half a meter long.
