Then add the peanuts and fried gram dal, stirring constantly over medium flame for even cooking. Keep frying until the peanuts start popping, taking care not to burn them. If you prefer, you can use skinless peanuts instead.Next, add the curry leaves and fry them along with any remaining nuts. Finally, fry the Aval Poha until it becomes crispy and attains a lovely golden color. You might require more oil or ghee for this step, or you can choose to fry the ingredients in batches.Once all the fried items are ready, transfer them to a mixing bowl. Add salt, red chilli powder, and asafoetida to the mixture and toss gently to ensure even distribution of flavors. Now, incorporate the Kara boondi and broken Omapodi into the mixture, gently tossing again to combine all the components thoroughly.Allow the mixture to cool completely before adding the sugar. Once cooled, mix everything well to ensure the sugar is evenly distributed throughout the mixture. Finally, transfer the prepared Madras Mixture to an airtight container to maintain its freshness.It's worth noting that you can customize the mixture by adding other ingredients such as Kara sev, broken murukku, maida biscuits, ola pakoda, thattai broken, or fried channa dal if desired. The recipe suggests using 1 cup of besan for making boondi and 1 cup of besan with ½ cup of rice flour for making omapodi sev. However, these proportions can be adjusted according to personal preference.To enjoy the Madras Mixture at its best, always store it in an airtight container. It can be savored for up to a week, making it a delightful snack to enjoy during the festive season or any time you crave a flavorful South Indian treat.
