The hottest type of chili in Indonesia is the big green chili. Green chili is the young phase of red chili. Usually, green chilies are used to flavor dishes, especially stir-fries. Green chili itself is divided into two types, namely large and curly. Large green chilies are red chilies that are not yet ripe. The color is dark green with a crunchy texture. The characteristics are the same as large red chilies, only the color is still dark green. In addition, large green chilies are most suitable for processing and used as an ingredient for stir-frying by cutting them obliquely and mixing them into stir-fries. The way to process large green chilies is by boiling or frying them first before processing.
