“Papaitan” or “Pinapaitan” is a native soup dish with a bitter taste; it is one of the well- known recipes in the Philippines. The dish originates from the Ilocos region, the word Papaitan is taken from the Ilocano word Napait or Pait which means bitter. It is made from different beef innards such as tripe, liver, kidney, intestine, pancreas, and heart that are cooked in bile and sampalok or calamansi juice. The bitterness comes from the gall that is used; sometimes the bitter juice is an extract of the masticated grass (“Pespes”) from the animal's bladder.
