Dambalkhacho is a traditional Georgian dry moldy cheese that originates from the Mtskheta-Mtianeti region. Made from leftover buttermilk cottage cheese, the cheese is kneaded with salt and dried on a webbed grate over a flame. The dried lumps are then aged in clay pots for 2-3 months to allow the cheese to develop its distinct mold and intense aroma.
