Tomato, paste 10 g Chilli, powder 1 g Smoked paprika 3 g Fresh ginger 2 g Olive oil 15 ml Thyme, fresh 1 pc Smoked paprika 5 g Garlic, chopped 15 g Tomato, paste 15 g Coriander 10 g Olive oil 25 mlGarnish: Basil leaf 15 g Crispy potato 50 gIt is said that consumption of spicy & hot dishes have been doubling every year. Cook in a low temperature at 140°C for 30 to 40 minutes. Sauce: In a hot pan, add the olive oil, the vegetables and stir for 5 minutes. Add the Fish Stock Powder, red chili pepper, tomato paste, the seasoning and Tomato Pronto and cook for 20 minutes. Garnish: Plate the cooked marinated sea bass in a fish tray then add the sauce on top and garnish with crispy potatoes and fresh basil.
