The Slow Food movement was founded by Carlo Petrini in Italy to combat fast food. It claims to preserve the cultural cuisine and the associated food plants and seeds, domestic animals, and farming within an ecoregion.Terra Madre is a network of food communities, each committed to producing quality food in a responsible, sustainable way. The three key words for the Salone del Gusto are: Good, Clean and Fair. Good, satisfying for the senses. A subjective concept that combines knowledge and taste. Clean, respectful of the environment, sustainable throughout the supply chain: from field to fork. Fair, in keeping with concepts of social justice in places of production and commercialization.
